Blackcurrant jam and ham hock terrine / ブラックカラントジャムとハムのテリーヌ

[ノーズ］ グラスに顔を近づけると、まずはフレッシュ＆フローラルな香りが炸裂します。予期しない一瞬の出会いのよう。時間をおくとチョークや石灰石の香りがベールを脱いできて、ポスターカラーやニスの香りが現れると、庭にあるアーティストのアトリエ小屋にいるよな錯覚を覚えます。 [パレット] 味わいは甘さとスモーク（ブラックカラントジャムとハムのテリーヌ）が興味深くバランスしています。パフュームとハニー、そして燻製のアソートのようです。加水すると軽やかな一面を垣間見せます。一層のバニラの香りがフェンネル（種のようで、甘く煮たようで、葉のようでもある）を伴って現れてくる。そしてフィニッシュで私たちはキャンプファイヤーで燻されたヒースが広がり、暑い午後のビーチへと連れて行かれるよう。 A soft, gentle, slightly cooling aroma greeted the Panel. With time, sweet and creamy notes emerged; chocolate cake with mint buttercream and then blackberry pie with cinnamon flavoured whipped cream. The taste neat continued with the fruit and spicy theme; hot cross buns with a bramble jam filling but also flavours of chocolate custard and a dark chocolate Bounty. With water very fruity on the nose; white grape and cranberry juice, kiwis and pineapples as well as a traditional British sherry trifle. The taste now like a tropical smoothie as well as leaving you with the gentle fizz of an Appletiser.
